BREAD DOSA
soft like cotton

Ingredients:
Rice-3cups

fenugreek seeds-1/4 teaspo-1CUPCURD OR BUTTERMILK-AS REQUIRED FOR GRINDINGSODA-2 PINCHSALT TO TASTE

Process:
1.Soak rice and fenugreek seeds for 6hrs, then grind with curd or butter milk along with atukulu(wet atukulu just before you starts grinding).2.Ferment for 7hrs3.add soda and salt before making dosa4.Heat dosapan,then apply oil, pour some batter and spread as utappam ,then spray some oil ,then close the lid,now turn other side and fry.serve hot with groundnut chutney

CORN FLOUR MURUKKU

Andhra recipes are very famous, that too more credit goes to traditional recipes,i want to share corn flour muruku with u,this muruku is entirely different from other muruku,which tastes soft and crispy.

Ingredients

Riceflour-2 cups,cornflour-1 cup,besan flour-1 cup,roasted groundnut/peanut powder-1 cup,ajwain/vama-1/2 teaspoon,red chili powder- to taste,turmeric,ghee/un salted butter-3 tea spoons,salt-to taste

Process:
boil hot water and keep a side mix all the ingredients along with hot water make a firm dough,fill in the muruku maker,make muruku and deep fry in oil.

TOMATO SHERVA

Sherva,the name reminds the hyderabadi nawab style taste.every rice item is a great combination of this recipe.so this is my own tested recipe which i would like to share with u all today.
MAIN INGRIDIENTS

  • Boiled tomatoes-3
  • fried brown onion-1 /2 a onion
  • moghlai garam masala powder-1/4 teaspoon
  • finely beaten curd-2 tablespoons
  • chili powder-1/4 teaspoon
  • salt-to taste
  • oil-for tempering
  • ginger garlic paste-1 teaspoon

METHOD:

peel the skin of tomatoes and grind to a puree,strain it,and keep a side

grind the fried onions along with curd to a fine paste

to make moghlai garam masala dry roast 2cloves,5pepper,1 small stick of cinnamon,2 cardamoms.cool it and make to a fine powder.

now take a pan,add oil,when oil starts heating,add ginger garlic paste and saute it well,now add onin paste,fry well when a nice aroma comes, add tomato puree little water,when it starts boiling add red chili powder,salt,garam masala powder,red food colour.

its a great side dish served along with fried rices and any kind of pulav's and biryani's.

NOTE:this is the basic form of sherva,u can cook according to your own style.

ALUPARATHA







A very tasty and authentic recipe, its my self recipe which is so simple and tasty recipe,if ur bored of masalas adding in ur regular parathas,u can try this recipe.

INGRIDIENTS

FOR PREPARING DOUGH
*************************
  1. Wheat flour-1 1/2 cup
  2. maida/all purpose flour-3/4 cup

  3. water-required to make dough

  4. oil- 2 teaspoons

FOR STUFFING

  • boiled potatoes-4


  • green chili paste-1 table spoon


  • grated cilantro-2 table spoons


  • sesame seeds/nuvvulu-1 table spoon


  • cumin seeds or jilakarra-1/2 teaspoon


  • lemon juice-1 tablespoon


  • salt-for taste


  • turmeric-1/8 teaspoon

METHOD:

in a bowl mix all the flours,add water to make dough,dough should be made medium, not much thick or thin,it should be able to hold the stuff.The purpose of adding oil to the dough is,it gives nice texture to the dough.

now in a bowl add all the ingredient's given in the stuff preparation,mash well with the help of masher,to avoid lumps alu should be boiled well.now make the stuff into big lemon size ball

now roll the dough and stuff the potato ball,cover the edges well.and again roll like paratha's

fry well with oil/ghee on both sides, and serve hot with pickle.







BADAM MILK

INGRIDIENTS

  1. whole milk-6 cups
  2. ilaichi or cardamom powder-1/4 tea spoon
  3. yellow food colour-2 pinches
  4. sugar-12 tea spoons
  5. almonds-12 no

METHOD: Take a container add milk,when milk starts boiling add sugar,food colour

dilute food colour in few drops of milk then add to the boiling milk,stir well.

microwave almonds in a microwave safe bowl for 2 minutes,cool it and remove the brown layer of almonds.Grate into thin slices.

add the grated almonds to the boiling mixture

add sugar and cardamom powder.

u can serve the badam milk hot or chilled one based on Ur taste
